Nourish your mind and body in this discussion on mindful nutrition with May Zhu, a registered dietitian nutritionist. She’ll walk you through a healthy recipe you can make at home while inspiring you to eat well, eat delicious, and define your own version of health.
INGREDIENTS
– 2 large sweet potatoes – washed, peeled, and cut into 1-inch pieces
– 2 tablespoons olive oil
– 1/2 teaspoon salt
– 1/2 teaspoon pepper
– 1 (15-oz) can black beans, drained and rinsed
– 3 green onions, trimmed and thinly sliced (use the white and green)
– 1 medium red bell pepper, seeded and diced small
– 1 medium yellow bell pepper, seeded and diced small
– 1/2 cup cilantro leaves, minced (about half of 1 bunch) For the Dressing:
– 2 tablespoons maple syrup
– 2 tablespoons lime juice (or juice of 1 whole lime)
– 1/4 cup of extra virgin olive oil
INSTRUCTONS
1. Preheat the oven to 400F. Line a baking sheet with a silicone baking sheet or spray with cooking spray and add the sweet potatoes in an even, flat layer. Evenly drizzle with 2 Tbsp. olive oil, season with salt and pepper and bake for about 35-40 minutes.
2. While potatoes bake, prep and chop the remaining ingredients.
3. In a large bowl, add the black beans, green onions, red/yellow pepper, and cilantro; set aside.
4. Meanwhile, combine vinaigrette ingredients: maple syrup, lime juice, olive oil, salt, and pepper.
5. After potatoes are cooked, let them cool for about 5 minutes and then add them to the bowl with the beans and vegetables. Add the maple-lime vinaigrette and toss to combine. Adjust seasoning (dressing, salt, and pepper) as desired.
6. Serve by itself or with an extra protein. Salad can be served warmed at room temperature or chilled and can be kept in the fridge for up to 4 days.
