Fry in a little coconut cream
1 red & 1 brown onion chopped
4 cloves garlic chopped
2″ ginger chopped
1/2 a dried red chilli
In another pan fry
2 x star anise
2 x cinnamon sticks
2 Tbs coriander seed
3 x cardomom pods
2 tsp yellow mustard seed
1 tsp black pepper
Once aromatic and to soup mix
Add to caramelized onion mix
400gm chopped tinned tomatoes
1/4 cup brown sugar or palm sugar
200ml water
Simmer for 5minutes and…
Blend well….
Add
200gm rinsed red lentils
200ml water
And simmer on low for 20 minutes to cook lentils then add
2tbsp red wine vinegar
200ml coconut cream or milk
Simmer for another 5 mins
Serve topped with fresh herbs, coconut cream and fresh lime ……yummmm
