A new, limited-time sushi roll is now available exclusively at Sushi Tokyo, located on Manhattan’s Upper West Side. The roll, called the YeahThatsKosher Roll, was created as a collaboration between YeahThatsKosher and the owner of this Sushi Tokyo location, with the goal of introducing something intentionally different from the standard sushi roll lineup.

Rather than following familiar formats or popular flavor profiles, this roll was designed to focus on balance and contrast. The objective was to create a roll that delivers sweetness, acidity, tartness, and umami in measured layers, without relying on spice or heavy sauces to carry the experience.

This roll was conceived by me (Dani of YeahThatsKosher), and refined by my sister and her husband, Lisa & Shlomo Maghen (founders of OmakaseKosherTours – Kosher itineraries and tours to Japan), and the owner and chef at Sushi Tokyo Manhattan.

The Flavor Concept Behind the YeahThatsKosher Roll

The starting point for the YeahThatsKosher Roll was moving away from heat-driven rolls. While spicy rolls are common and widely loved, this concept aimed to explore complexity through citrus, fruit, and rich fish, allowing each bite to evolve as it is eaten.

The base of the roll uses white rice to keep the foundation neutral and clean. Inside the roll are mango for natural sweetness, cucumber for freshness and texture, avocado for richness, and fresh lemon fruit to introduce real acidity. These elements were chosen to create contrast without overpowering one another.

On the outside, the roll is wrapped with toro tuna that is lightly torched to bring out depth and richness while maintaining delicacy. Lemon zest brightens the toro, while a yuzu drizzle adds floral acidity and gentle tartness. Scallions provide freshness and bite, and a light finish of toasted sesame oil adds warmth and umami that lingers without masking the other flavors.

The result is a roll that starts bright, shifts into creamy and sweet, and finishes savory and aromatic, without any single ingredient dominating the experience.

Sushi Tokyo Upper West Side as the Setting

Sushi Tokyo Upper West Side is positioned as a sit-down sushi restaurant offering a polished waiter service experience rather than a fast casual model. While not an omakase restaurant, it consistently offers access to high-quality kosher fish, including toro, tuna, salmon, and other premium cuts, served in a composed and comfortable dining environment.

Beyond specialty rolls, the restaurant’s menu includes a broad range of sushi and Asian inspired dishes. Guests can find classic and specialty rolls, sashimi and nigiri selections, tempura dishes, fried rice, noodle dishes, and a variety of appetizers that make it suitable for a full dinner experience, whether ordering sushi-focused plates or a mix of kitchen items.

Limited Time and Location Exclusive

The YeahThatsKosher Roll is available only at the Sushi Tokyo Upper West Side location and only for a limited time. It is not offered at other Sushi Tokyo locations and is not intended to be a permanent menu item.
