A listener on my radio program asked about the mysterious sweetener in her yogurt: What is acesulfame K? Many of us choose “diet” or fruit-flavored yogurt to save calories, but a quick look at the ingredients list reveals names that are hard to pronounce. One of the most common among them is acesulfame K (or E950).

What is it exactly? Acesulfame K is an artificial sweetener that is 200 times sweeter than sugar. It is very common in the food industry because it is resistant to high temperatures and blends well with other sweeteners.

Although it is approved for use by health authorities worldwide, studies from recent years raise questions regarding its effect on the microbiome (gut bacteria) and on our sense of satiety.

It was discovered by chance in the 1960s and has since become one of the most common sweeteners in the world, mainly because of its stability at high heat (which allows baking) and its long shelf life. Although it is approved for use by the FDA and the EFSA, the accumulation of studies over the past decade raises question marks regarding its long-term metabolic and health effects.

Effect on the microbiome and insulin resistance: One of the main claims against artificial sweeteners, including acesulfame K, concerns changes in the composition of gut bacteria (the microbiome). Studies published in journals such as Nature and PLOS ONE indicate that regular consumption of these sweeteners may cause a disruption in bacterial balance.

This change has been found to correlate with an increase in blood sugar levels and impaired insulin sensitivity. In other words, although the sweetener itself does not contain sugar, it may disrupt the way the body processes sugars from other sources.

Additional side effects: A study that followed more than 100,000 participants found a statistical link between high consumption of acesulfame K and an increased risk of cardiovascular disease, as well as an increased risk of certain types of cancer (mainly breast cancer and obesity-related cancer). It is important to note that this is an observational study that does not prove direct causation, but it constitutes a significant warning sign in the scientific community.

Effect on the brain and appetite: From a neurological perspective, acesulfame K contains a methyl ether, and there are claims (which have not yet been definitively proven in humans but have been seen in animal models) that excessive consumption may affect cognitive function. In addition, the intense sweetness of the sweetener (200 times sweeter than sugar) may “trick” the brain; the brain receives a signal that sugar is entering but does not receive the expected energy (calories), which may lead to increased appetite and overconsumption of carbohydrates later in the day.

Sucralose, stevia or acesulfame? When looking for a substitute for sugar or honey, the question arises what is preferable.

Sucralose: Considered very stable and its taste is closest to sugar, but it is still a synthetic sweetener.
Stevia: Derived from a natural source (the stevia plant). It is considered a “cleaner” option, although many find it difficult to get used to its bitter aftertaste.
The bottom line: Although both are preferable to acesulfame K, the professional recommendation is to try to reduce dependence on the intense sweet taste that these sweeteners produce.

The winning solution: Return to basics

The best way to control what goes into the body is to switch to plain “clean” yogurt (such as 3% bio yogurt or Greek yogurt). Instead of artificial sweeteners, it can easily be upgraded with:

Cinnamon: A spice that gives the illusion of sweetness without any sugar at all.

High-quality vanilla extract: A few drops of real vanilla can completely change the taste experience.
