Seeking to further its mission of “Making Communities Healthier,” Castleview Hospital is partnering with Active Re-Entry and Utah State University Extension to host a Community Cooking Class as a part of National Nutrition Month.

Eva Tseng from Castleview, alongside Harim Driggs from Extension, joined the KOAL newsroom to discuss the event and the benefit it looks to bring to the broader community.

Speaking to the event’s origin, Tseng stated, “National Nutrition Month is celebrated every March, focusing on informed food choices and healthy habits. So the theme this year is ‘Discover the Power of Nutrition.’ And so we want to do something for the community that is practical and hands-on.”

Looking at the collaboration involved in the event, Tseng shared,” We will be partnering with USU Extension, Active Re-Entry and HHS, which is our dietary management company at Castleview Hospital.”

Driggs spoke to the event from the Extension perspective: “We always like doing events, especially when it comes to nutrition. When it comes to Create Better Health, we want to share these nutrition basics with the community, and especially in this month that we’re celebrating.”

She continued,” It’s great that we have so many partners who are willing to help. I feel like we have a bunch of like brothers to be able to do this. And it’s really fun to collaborate with Castleview; they have always been a great partner. And Active Re-Entry, they’re awesome as well.”

The class will teach attendees how to prepare an appetizer, an entrée and a dessert.

Space is limited to 35 participants, so those interested are encouraged to register online at castleviewhospital.net/events as soon as possible.

Castleview Hospital’s Community Cooking Class is set for Thursday, March 19, starting at 6 p.m. in the Active Re-Entry test kitchen located at 10 South Fairgrounds Road in Price. Registration is free and can be done online here.
