*A quick and easy recipe for pumpkin delight soup

( I made this recipe with left over vegetables so don’t worry if you don’t have the exact ingredients just use whatever veg you have * but Pumpkin must be your main ingredient.

1 large slice of pumpkin
1 cup of mushrooms
1/2 Red/ Green Bell Pepper
1 x Scellion
1 x onion
1 Peg of Ginger
4 x Pegs Garlic
Half cup of sugar snap peas
1/2 scotch bonnet pepper
1/2 small cup of Baby sweet corn
1 or more carrots
3 medium size potatoes
2 medium size sweet potatoes

2 x tablespoon Red Lentils
2 x tablespoon Pearl Barley
2 x tablespoon Crushed Pasta
1 x Basil leaf
1 x Parsley leaf
1 x Thyme leaves leaf

Seasoning:

1 x tablespoon cumin, coriander and sesame seed iVeganIT seasoning
1 x tablespoon garlic salt
1x tablespoon vegetable seasoning
2 x vegetable stock cubes
1 x mixed herbs
1x tablespoon Cayenne pepper
1/2 tbs turmeric powder

Pearl barley

Nutrition credentials of whole grain barley:
* Low in fat (which is mostly unsaturated) and high in carbohydrate (mainly starch).
