Ingredients:

Sweet potato- 3
Fish -1 big fillet (275g)
Cherry tomato 5-6
Lemon zest
Parsley
Olive oil

For marination:

Ginger garlic paste
Onion paste
Sesame seeds-1tbsp
Curry Leaf
Italian herbs
Pepper
Chilly slit with spring onion leaves
Soya sauce-1.5 tbsp
paprika

Method:

Cut the sweet potato to half
Cut the fish to two halves
Add in ginger garlic ,onion paste,italian herbs,paprika,pepper,slit chilli ,onion leaves mix ,soya sauce,curry leaf sesame to a cup and mix
Marinate this mixture to fish by applying olive oil first
Then grate the lemon zest and squeeze it over
Add in olive oil to a cooking pan once oil heated place the fish,sweet potato cherry tomatoes and parsley cover and cook for 12-15 minutes
Flip it then cook again for 5-6 minutes.

Fish is rich in calcium and phosphorus and a great source of minerals, such as iron, zinc, iodine, magnesium, and potassium. Sweet potatoes are a rich source of fibre as well as containing an array of vitamins and minerals including iron, calcium, selenium, and they’re a good source of most of our B vitamins and vitamin C. One of the key nutritional benefits of sweet potato is that they’re high in an antioxidant known as beta-carotene, which converts to vitamin A once consumed. Add a drizzle of olive oil just before serving to increase your absorption of beneficial beta-carotene.
