The GCFSI grant-funded team at the Sokoine University of Agriculture is using vitamin-A fortified sweet potatoes to address micronutrient deficiency while promoting enterprise development among women in Tanzania through training in food processing, product development, and business management. Moshi and his team, women in the small farming village of Gairo help the men prepare sweet potato chips (or “chipsi za viazi vitamu” in Kiswahili), but not without some good-natured ribbing from the group.
