Mr Rimmer is back in the kitchen taking us through the next in the edition of Monday Meals.
This time it’s a fan favourite…CHICKEN!
Really simple dinner for two or lunch, roasted in one pan with new potatoes and asparagus. Spicy, sweet, succulent whilst being nutritious, healthy and packed with flavour.

Ingredients
2x Chicken Breasts
Two handfuls of new potatoes
Small bunch of asparagus
1tsp – Paprika, Dried Oregano, Cumin Powder, Chilli Powder

Method
1. Preheat oven to 200degC. Slice up washed and scrubbed potatoes into small pieces and spread evenly in baking tray. Add oil and roast in oven for 20 mins.
2. Meanwhile, add spices into a bowl and mix together.
3. Take the tray from the oven and add the chicken breasts and asparagus (snapped and prepared). Sprinkle all the spices over the contents and crunch on salt and pepper. Place in oven and cook for a further 20 mins.
4. Remove from oven and plate.
5. Eat and enjoy!
