The fresh jackfruit pulp is 70% water, but if dried is just like wheat flour. Sometimes in Asian countries jackfruit dried pulp is used as a substitute of wheat flour where there are lack of wheat grain. It is rich in starch, vitamins and minerals. It contains phytochemicals like flavonoids, isoflavones, beta carotene, saponins, sterols. It is antioxidant, anti-inflammatory, antifungal and antibacterial.
