Here in New York City, it feels like we’re just on the precipice of spring. The weather is starting to warm up, there are buds on the trees, and the days are finally longer (goodbye darkness at 4 p.m.). Along with my chunky sweaters, I’m swapping out some of those heavy, richer desserts (like this pecan pie cheesecake) for brighter, fruity, lemony desserts, such as classic lemon bars or this delicious lemon pudding cake.
I’m also a huge nut butter fan, and while classic creamy peanut butter will always have a place on my shelf, I rarely say no to trying a new flavor. If it tastes like one of my favorite desserts (hello, carrot cake), even better. My new favorite, unsurprisingly, is this seasonal jar of Lemon Cookie Cashew Butter from Big Spoon Roasters.

What You Should Know About Big Spoon Roasters Lemon Cookie Cashew Butter
Based out of North Carolina, Big Spoon Roasters specializes in uniquely flavored nut butters you’d have trouble finding elsewhere (Think: Linzer Cookie and Lum Lum Thai Curry). All of the company’s nut butters are handcrafted in small batches and made with certified fair trade and certified organic ingredients.
Big Spoon fans might be thinking: Hey this sounds familiar — and they’d be right! Lemon Cookie Cashew Butter first made its debut as a limited release under the name “Lemon Coconut.” After seeing such positive reviews (and also winning the NC Specialty Food Association Award in 2023), the very same nut butter was renamed “Lemon Cookie” and earned a permanent spot in Big Spoon’s lineup in March 2024.
The Lemon Cookie Cashew Butter contains organic cashews, house-toasted coconut, lemon, organic coconut nectar, organic virgin coconut oil, and Jacobsen sea salt. It’s gluten-, palm-, soy-, and refined-sugar free, as well as vegan.
Formerly a seasonal fan favorite, Lemon Cookie Cashew Butter is now available year-round online and at select grocery stores nationwide. The nut butters are packaged in glass jars, with elegant gold notes on the label and lid. (It’s giving LUXURY.) They come in two sizes: a large 13-ounce jar ($15.99) and mini 3-ounce jars ($7.75).

My Honest Review of Big Spoon Roasters Lemon Cookie Cashew Butter
I opened the jar to find whole pieces of toasted coconut speckled with bits of tiny cashew pieces. Similar to other nut butters, I made sure to give it a nice mix in case any of the oils had separated before sampling.

The Lemon Cookie Butter is thick like a hummus or miso paste and smells just like the ingredients it’s made of — cashews, lemon, and coconut. I dug in spoon-first and sampled it on its own first. It’s creamy and lemon-y with a bright, tart zing. It tastes like fresh lemon zest (there are no artificial flavors) with a hint of coconut. The cashew flavor is present but mild and serves as a mellow base for the lemon and coconut to shine. Little pieces of coconut provide a bit of crunch, and coconut nectar adds a subtle sweetness.

Next, I spooned some over a yogurt parfait. Lemon curd and nut butter are two of my favorite toppings to upgrade my standard yogurt bowl, and the Lemon Cookie Cashew Butter combines the two in one delicious spread! It would make a great addition to any spring baking. I see it being fantastic drizzled over classic pound cake or sandwiched in between shortbread cookies. But it’s also perfectly good straight out the jar.
