Looking to add more veggies to your plate but don’t know where to start? Dietitians shared the healthiest vegetables to add to your diet, plus tips on how to incorporate them into your meal rotation.
“Vegetables are a wonderful part of a healthy diet. They provide an array of nutrients, including my all-time favorite, fiber,” says Sue-Ellen Anderson-Haynes, RDN, national spokesperson for the Academy of Nutrition and Dietetics and founder of 360Girls&Women.
Experts recommend eating about two to three cups of vegetables per day. If you’re looking to go beyond salads, Anderson-Haynes suggests adding vegetables to soups, stews, casseroles, and pasta dishes. “This way they get to absorb the flavors going into the meal,” she says. She also recommends adding vegetables to fresh juices and smoothies as part of a morning meal. Avocado can add some extra creaminess to your green smoothie, and spinach is a common smoothie or juice add-in that doesn’t significantly alter the taste. Another way to get more nutrients on your plate is spiralizing veggies and using as a salad base or pasta substitute or add-in. “This is a fun way to consume them for both children and adults,” says Anderson-Haynes.
