Despite these advancements, questions remain regarding the most effective techniques for incorporating SeNPs into foods, their interaction with other bioactive compounds, and the resulting effects on food quality and safety.
This Research Topic aims to explore the multifaceted impacts and applications of selenium nanoparticles within diverse food systems. We seek to address fundamental questions surrounding their benefits and limitations, including how SeNPs influence nutritional profiles, interact with other food constituents, and affect the sensory and functional properties of foods. The goal is to present both foundational science and innovative approaches that inform the safe and effective use of SeNPs in the food industry, while also providing insights into potential risks, regulatory considerations, and future commercialization pathways.
