Histamine is an important neurotransmitter that plays a role in the immune system. Not only does the body make histamines, but they are also found in food and the environment. When histamine levels become too high, they can cause allergy-like symptoms such as migraines, runny nose, itching and upset stomach.
Diamine oxidase (DAO) is the major enzyme involved in histamine metabolism and is responsible for keeping histamine levels stable.
Some of us have a genetic predisposition where we can’t make enough DAO which causes histamine intolerance.
Another reason for low DAO can be insufficient nutrients. Since the DAO enzyme is dependent on vitamin B6, B12, iron, copper and vitamin C, without enough of these DAO won’t be able to degrade histamine which also results in histamine intolerance.
