*Guacamole with Veggies*

6 avocados, scored and mashed
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
salt, to taste
black pepper, freshly cracked, to taste
1 garlic clove, crushed and minced
1 small red onion, diced
3 small plum tomatoes, diced
1 jalapeno pepper, seeds removed, minced
juice of 1 lemon
juice and zest of 2 limes
3 tablespoons cilantro leaves, picked and sliced
sunflower seeds, toasted, for garnish

*Instructions*
Slice the avocados in half lengthwise. Push the flat blade of a knife into the pit and twist slightly to free it from the fruit. Score the avocado flesh with the point of the knife while palming the skin, and then scoop out into a large stainless steel or glass bowl. Mash with a fork a moderately smooth consistency. It’s okay to leave some chunks.

Add all remaining ingredients and combine thoroughly with a spoon. Remember that the avocado will begin to oxidize and turn brown quickly, so make it when you are ready to eat it.

Serve with fresh tortillas and fresh, ripe, crispy vegetables.
